It's Friday Cocktail Time! Long Island Iced Tea Edition!

Hey mommas!! Friday is finally here! Hope you all had a wonderful week! I'm so excited that it's finally starting to get consistently warmer around here in OKC.  This winter was a dud and I'm ready to say bye to it already.  Over it.  I like a little winter weather (i.e. SNOW) but ice? Ummm...no thanks.  I'll pass.  Can you tell I have spring fever?? :)

My youngest kiddo turned 7 yesterday, and I'm feeling a bit like an old lady.  How is it that my youngest kid is already 7??  I still feel like a 21 year old for goodness' sake!  So needless to say, I've been super busy this week in birthday prep mode for him.  You mommas know how it goes...wrapping presents, cake, party planning, party favors and everything in between.  When you first have kids, birthday parties sound like so much fun to plan.  And they are a little bit.  But they are sooo much work!  I'm exhausted and it's not even party time yet!!  Ugh.

Who needs a strong cocktail?! Okay, good.  Me too!  Enter the Long Island Iced Tea.  Yeah, she's a strong one alright.  This is the cocktail that they limit you to 3 max at many bars because it's loaded with plenty of booze.  It's strange because you'd think that having 5 different alcohols in a drink would taste awful, but somehow it's delicious.  Throw in some coca-cola and you have yourself a yummy and strong cocktail.  No, there's not actually any tea in it--you knew that right? ;)  It's okay, I didn't know years ago when I ordered my first one either.  Here I was thinking I was ordering some alcoholic version of sweet tea.  Umm not so much.  This drink is not for the faint of heart so proceed with caution.  But do proceed, because it really is delicious--trust me.   Here it is girls, my Long Island Iced Tea.  Enjoy and I'll see you next week!

MOMMA MOJITO'S LONG ISLAND ICED TEA (makes 2!)

Ingredients:

  • 1 oz. Gin
  • 1 oz. White Rum
  • 1 oz. Silver Tequila
  • 1 oz. Vodka
  • 1 oz. Triple Sec
  • .75 to 1 oz. Simple Syrup (depending on your sweet preference!)
  • Juice of Half a Lemon
  • Coca-Cola to Taste
  • 2 Lemon Wedges for Garnish

Directions:

In a cocktail shaker filled with ice, pour in all liquors, simple syrup, and lemon juice.  Shake until well chilled.  Strain into 2 highball glasses filled with ice.  Next, pour in coca-cola to the top of each glass.  Garnish with the lemon wedges.  Cheers!
