It's Friday Cocktail Time! Pineapple Cooler Edition

Hey mommas! Happy Friday to you girls! Hope you all had a wonderful week.  Yesterday was the official first day of summer, although it really feels like summer to me as soon as school lets out.  I'm sure you mommas are the same way.

Something very big and exciting happened this week at Momma Mojito! After a very long legal battle, Momma Mojito is officially and finally a registered United States trademark!  It's something I have been working hard on ever since I began this venture.  I knew I wanted to have Momma Mojito trademarked, but it hasn't been without its challenges that's for sure.  So this week, when I got the notice that it had finally been approved and published (after almost 2 years of waiting!), I was absolutely overjoyed.  I couldn't believe it.  I am still pretty ecstatic about it. :)

To celebrate Momma Mojito finally being a registered trademark and the official start to summer, I made a super yummy and festive cocktail that you're going to love.  It's easy to make even though it looks difficult!  It's called a Pineapple Cooler and it's served in a pineapple of course!  So here it is girls, enjoy and have a great weekend! MOMMA MOJITO'S PINEAPPLE COOLER

Ingredients/Supplies:

  • 1 hollowed out pineapple (save as much of the juice as you can, and of course save the fruit for snacking!)
  • 1 oz Malibu Rum
  • 1 oz Pineapple Rum
  • Juice of Half a Lime
  • 4 oz Pineapple Juice (if you don't have enough from the actual pineapple, add some canned pineapple juice!)
  • Cocktail Umbrella and Paper Straw for Garnish

Directions:

In the hollowed-out pineapple, fill with ice.  (TIP-- if you notice your pineapple is leaking through the skin then place a Solo plastic cup inside first...it fits perfectly and you can cut the top off if you want to hide it!)  Next, fill with rums, lime juice, and pineapple juice.  Stir.  Garnish with the cocktail umbrella and paper straw! Cheers! (Best enjoyed in the pool, lake, ocean....just saying!) :)

Hey mommas! Happy Friday to you girls! Hope you all are having a great summer so far! It's been a super busy one for me! We have been out of town for basically all of summer so far, and now that we are finally back home it feels so good! I am so excited to get some time with my kiddos at the pool and just catching up on lost time during the school year.

This week, the kids and I headed to our local farmer's market to stock up on all sorts of yummy fruits and veggies.  We had the greatest time talking to all the farmers. :) Also, my kids tend to eat better when they get a say on what I buy.  One of the things they insisted that we load up on was all of the yummy fresh peaches.  Oh my goodness, I am sooooo glad we did.  I love fresh peaches in the summertime.  Is there anything better?  So with our large bushel of delicious peaches, I have been trying to make myself utilize them in some recipes instead of just devouring them whole...although truth be told, I love to do that too.  Peaches are wonderful in so many desserts, but did you know they are also fabulous in cocktails?  It's true.  The sweetness with just a bit of tart makes for a perfect summer drink.  So first up on peach cocktail making is of course....the mojito.  Peach Mojitos are juicy and refreshing.  I highly recommend trying one this weekend girls and enjoy the fruits of summer!  Cheers and see you next week!

MOMMA MOJITO'S PEACH MOJITO

Ingredients:

  • 1.5 oz. Bacardi White Rum
  • Juice of Half a Lime
  • Half a Peach (diced)
  • 5-6 Medium Mint Leaves
  • .5 oz Simple Syrup
  • Club Soda to Taste
  • Mint Sprig, Peach Slice, and Lime Wedge for Garnish

Directions:

In a highball glass, throw in your diced peaches, mint leaves, and simple syrup.  Muddle until the peaches begin to break down.  Fill the glass with crushed ice.  Pour in rum and lime juice.  Now fill to the top with club soda.  Stir lightly.  Garnish.  Cheers mommas!

It's Friday Cocktail Time! Malibu Mule Edition!

Hey mommas! Happy Friday to ya!! Hope you girls are enjoying your summer break so far. I know I sure am.  I'm sure I'll get tired of not having any personal time before too long, but for now I am loving having my babies home.  We've been getting lots of extra snuggle time in this week, and that's definitely my favorite part about having them home for summer.

We were out of town last weekend for Memorial Day for part of the weekend, and we came home to a pretty bare pantry.  While my husband was grilling up some things we had scrounged together out of the fridge, I was really craving a cocktail but I wasn't sure what I even had to make a cocktail with!  Out of a little bit of desperation and some creativity, this delicious cocktail was born.  And girls, I am so glad it did.  I call it a Malibu Mule.  It's a take on a Moscow Mule but with a summery vibe! It is oh so good.  Don't you love those times you have nothing in your house, but somehow you make something fabulous out of it?! Heck yeah!

I'll be making this cocktail all summer long....empty pantry or not! It is THAT good.  Try it out this weekend.  I know you're going to love it too! Cheers mommas!

MOMMA MOJITO'S MALIBU MULE

Ingredients:

  • Juice of Half a Lemon
  • 2 oz. Malibu Coconut Rum
  • 2 oz. Pineapple Juice
  • 4 oz. Ginger Beer
  • Spent Lemon Half and Mint Sprig for Garnish

Directions:

In a copper mug filled with ice, pour in lemon juice, rum, pineapple juice, and ginger beer.  Give it a slight stir.  Throw in the lemon half that you used for juicing for extra flavor and garnish as well as a sprig of mint! YUM! Cheers!

It's Friday Cocktail Time! The Mai Tai Edition!

Hey mommas! Happy Friday to ya!! Can you believe that summer is almost here?! I'm so excited! I looooove warm weather.  Seriously.  100 degrees doesn't really even phase me.  I'll take it all day, every day over freezing temperatures.  Plus, is there really anything better than a deliciously cold cocktail on a super hot summer day?! ;)

I have a feeling I'll be needing one this weekend for sure.  I'm spending my Friday and part of Saturday being a volunteer for my daughter's Girl Scout camping trip.  I know what you all are thinking.  I'm not a camper.  You're totally right.  I'm more of a cabin type of girl.  I like to sleep in a normal bed and use a normal bathroom.  Somehow though, I'm always forced to camp against my will! Haha! No but seriously...my entire family loves camping.  We always camped constantly growing up and now I married a man who loves to camp.  Of course, my kids also love camping.  So I suck it up and camp a LOT.  You'd think I'd be a regular pro by now, but I still tend to complain though every time.  I'm sorry, but camping is NOT a vacation.  Camping is work!! There's so much packing up a ton of supplies just to be able to function somewhat.  Then you get there, and you have to unload and set it all up.  Then you have to figure out how to cook a meal without any normal everyday conveniences like a stove and an oven.  Next, you have to figure out how to wash all said cooking supplies without a sink.  After that, you go sleep on a makeshift bed that's essentially on the cold ground and try to get a few hours of uncomfortable sleep all the while wondering what in the world that noise was outside your tent!  Surely, I'm not alone in thinking that camping is more trouble than it's worth, right?! Lol. I do think it's a ton of work, but I love seeing how happy it makes my kids.  So I'll suck it up this weekend and put on my happy face for my girl and her girl scout troop.  But between you mommas and me, I'll be wishing I at least had a glass of wine or a cold cocktail! ;)

On to more laid back topics, summer is the perfect time for a whole host of yummy tiki-inspired cocktails.  There are so many delicious fruits that are at their prime right now making them perfect additions to cocktails.  Plus, it's so hot that just about anything on ice tastes like heaven.  One of my favorite tiki cocktails is the Mai Tai.  Those of you that have followed along with me know that rum is my favorite liquor of course, and the Mai Tai is all about the rum.  It's a strong cocktail, but easy to drink nonetheless.  The flavors blend together perfectly, and it just tastes like summer.  I think my favorite part of this cocktail is the almond flavor!! YUM!! So here it is mommas...my delicious Mai Tai.  Mix one up this evening and enjoy it for me as I'm setting up tents and sleeping on the ground!! :)

MOMMA MOJITO'S MAI TAI

Ingredients:

  • 1 oz. Dark Rum
  • 1 oz. Amber Rum
  • 2 tbsps Orange Juice
  • .5 oz. Triple Sec
  • Juice of Half a Lime
  • 1 Drop of Almond Extract (or you can use Orgeat Syrup if you can locate it but Almond Extract works great too!)
  • 1 tsp Fine Raw Granulated Sugar
  • Dash of Grenadine
  • Spent Lime Half and Mint Sprig for Garnish

Directions:

In a cocktail shaker filled with crushed ice, pour in all ingredients except garnishes.  Shake until shaker is starting to get frosty...about 30 seconds.  Do not strain.  Pour entire contents into a glass of your choice.  Garnish with the half of the lime that you juiced and a sprig of mint (pat it in your hand a couple times to bring out the flavor!).  Cheers mommas!
