It's Friday Cocktail Time!! Mulled Wine Edition!!

Hey Mommas!! Happy Friday!! Can you believe the last weekend of October is already here?!  I'm sure you all have all sorts of fun Halloween activities planned with your little ones! Here in OKC, we got hit with a BIG cold front last night! Seriously, the wind was howling all night long.  It was really kind of eerie....perfect for Halloween time!!!  The cold is supposed to stick around here and we are forecast to have a cold Halloween night, so I decided I needed to come up with a new warm cocktail to cuddle up next to the fire with after all of these cold outdoor activities.  I have to admit that while I have made my fair share of warm cocktails, I have never made mulled wine until now.  That seems weird right?! I love cocktails, I love all things warm, I looooove wine, so why in the world have I not made mulled wine before now?! I have no earthly idea.  BUT, better late than never because THIS mulled wine is fabulous.  Oh so yummy and comforting.  It's citrusy, sweet, luscious, and just a bit spicy.  Plus, you can dress it up with all sorts of garnishes to make it look just as festive as it tastes.  So here's the recipe mommas!! MOMMA MOJITO'S MULLED WINE

1 Serving (Double for You and the Hubby or Multiply by 4 for a Pitcher Worth with a full Bottle of Wine!)

Ingredients:

  • 1 cup of Apple Cider
  • 3/4 cup of Red Wine (Cabernet Sauvignon or Merlot is best)
  • 1/2 tbsp of Honey
  • 1-2 Whole Cloves
  • 1 oz. of Fresh Orange Juice
  • 1 Cinnamon Stick
  • 1 Star Anise (can be found in the spice aisle)
  • Zest of Half a Clementine
  • Peel of Clementine for Garnish

Directions:

In a small saucepan, combine the cider, wine, honey, cloves, orange juice, cinnamon stick, star anise, and clementine zest.  Bring to a light boil and simmer on low heat for 10 minutes.  Remove from heat.  If you'd like to remove the spices, then strain into a mug.  Otherwise, pour straight into a mug and garnish with the clementine peel.  Enjoy this luscious, delicious, seasonal drink immediately.  Best served next to a fire.  Cheers mommas!

It's Friday Cocktail Time!! The Pirate PSL!!

Hey mommas!!! Happy first Friday of October!! Who's excited that October is finally here?? It's finally starting to feel a teeny bit like fall outside and signs of fall are all around.  I was driving the kids home from school today and noticed so many of the leaves have already started turning yellow.  There are pumpkins decorating every front porch in the neighborhood, and the gorgeous bursts of color with the mums and pansies just has me swooning!! My family and I went to the pumpkin patch last weekend and loaded up on all sorts of funky and odd-shaped pumpkins.  Isn't it fun to pick out the funkiest looking pumpkins that you can find?? Of course, you always have to pick out a big giant perfect orange one for the jack-o-lantern..right?? So much fun.  I'm planning on stocking up on some mums and pansies this weekend and planting them in the flower bed, and I can't wait!! Love this time of year!!

Speaking of fall, one of my other favorite things about fall is Pumpkin Spice Lattes of course!! I know that I have already professed my love for all things PSL to you mommas, but honestly PSL time only comes once a year so gotta get it while ya can!! ;)  Because I do so love a delicious PSL, I decided to carry my love on over to Friday Cocktail Time--one of my other loves--and combine them to one delicious and fabulous Friday post!! YAY!!!  So you mommas may not know this but in my little family, we're pretty big pirate fans around here.  Like seriously.  Pirates of the Caribbean?? We've seen every one.  SEVERAL times each.  We've been on the ride at DisneyWorld like a million times.  We've taken the pirate lessons there too.  Heck, my daughter got to go on stage at Disney and even get a sword-fighting lesson from Captain Jack Sparrow himself (while she was dressed up head-to-toe as a mermaid, mind you!).  Oh, and let's not forget Mr. Mojito and I looooove us some Captain Morgan.  Seriously, did you really think with a name like Momma Mojito that we wouldn't like Captain Morgan?! ;)  Anywho, did you know that every year at this time Captain Morgan releases their Jack-O'Blast Spiced Rum which is a Pumpkin Spice Rum??!! Yeah, so good.  It's actually one of the very, very few liquors I enjoy by itself.  So my cocktail recipe this week is called the Pirate Pumpkin Spice Latte because it mixes all of the yumminess of a PSL with all of the yumminess of the Pumpkin Spice Rum!! Plus, it's a breeze to make with our awesome shortcut of using Pumpkin Spice flavored Creamer!!  Make one this weekend and get excited for fall!! Cheers mommas!!! :)

MOMMA MOJITO'S PIRATE PUMPKIN SPICE LATTE

Ingredients:

  • 8 oz. Strong-Brewed Coffee
  • 2 oz. Captain Morgan Jack-O'Blast! Spiced Rum
  • 1 oz. Pumpkin Spice Flavored Coffee Creamer (any brand--I used Coffeemate....Use more or less than 1 oz. to your own taste!!)
  • Whipped Cream
  • Pumpkin Pie Spice
  • Caramel Sauce

Directions:

Make your coffee per your preferred method, but make it stronger than usual.  You need strong coffee to balance the sweetness!  When the coffee is done, pour it in a mug of your choice.  Pour in the rum and creamer and stir it all together.  Now top with the whipped cream, sprinkle of pumpkin pie spice, and a drizzle of caramel sauce.  Enjoy immediately!! It's finally here girls!!! The launch of our products goes LIVE tonight at midnight right here on the website!!! It's been a pretty hectic week around here at the Momma Mojito HQ! We've been so busy getting ready for our launch that we are more than ready for this Friday Cocktail Time!! We decided it was time to bring out the champagne for this edition!! Every girl loves champagne right??  And sometimes ya just gotta celebrate!!

Champagne is delicious just on its own but it's also really fun to throw some interesting pretty things in it and make it taste that much better!! So I decided to do my own take on mixing champagne into a mojito!! Why yes a MOJITO!! Sound strange? It is.  It's also sooo delicious!! It has all the yummy crisp flavors of a Mojito just a little more bubbly and a little less sweet!! You have to try this one!! Champagne Mojito?! YES PLEASE!

MOMMA MOJITO'S CHAMPAGNE MOJITO

Ingredients:

  • Brut Champagne
  • 1/2 oz. Bacardi White Rum
  • 1/4 oz. Rose's Sweetened Lime Juice
  • 1 Small Lime sliced (preferably Key Limes!)
  • Mint for garnish

Directions:

In a champagne flute, throw 3 small lime slices in the bottom of the flute.  Next, add the sweetened lime juice.  It's important that you use the sweetened lime juice because you need just a tad bit of sweet to balance out the lime and rum.  Next, add the Bacardi Rum.  Then, add that glorious champagne all the way to the top...it ends up being about 2/3 to 1/2 the glass depending on the size of your champagne flute.  Finally, add a lime wheel and a big sprig of mint to the top and you are done!! Time to celebrate!!!

It's Friday Cocktail Time! Red Wine Sangria Edition!

Hey mommas!! Happy Friday to ya!! I'm off at all sorts of school events today for my kiddos so I'm bringing back up an oldie but a goodie!! And it's perfect for this time of year!! My Red Wine Sangria is the BEST sangria there ever was.  No lie.  You have to try this recipe--I know you're going to love it.  Plus it's great for a crowd!! I published this Friday Cocktail Time close to this time last year so it's all Halloween themed which is great because today is the first official day of fall!! Yay!! Mommas-- it's almost Halloween and I am officially getting in the spirit!  If you're a regular reader, you'll remember my reluctance to welcome in the fall season a few weeks ago but I have finally come around.  My kiddos are super excited!  I have one little Buzz Lightyear and one little Catwoman this Halloween!  So to get in the spirit, I felt like I needed to make a WITCHES' BREW...or as you know it -- Sangria.  But let's call it Witches' Brew for now.  This Witches' Brew is actually my perfected original Sangria recipe.  And it's divine.  Have you ever been to the Mexican restaurant called Abuelo's?? Well if you haven't, you should--seriously it's yum.  And I would know!! About a million years ago, or well really ten to be exact, I actually worked at Abuelo's in College Station, Texas as a hostess.  Many people have horror stories about their time working in the food industry.  However, I can honestly say I became an even bigger fan of Abuelo's from working there.  Everything is clean and orderly.  Nothing weird happening behind the scenes in the kitchen that you as a customer don't want to know about.  Nope. Nada.  Every time I went back in the kitchen, my stomach would start growling.  Everything always looked and smelled delicious.  So take it from me, Abuelo's is worth the visit.

Moreover, Abuelo's makes a fabulous homemade sangria fresh every single day.  Yes homemade from scratch every single day.  YUM! Several years ago, I set out to make it and tried to remember how it went from my time stalking the bar area.  I couldn't remember exactly so I came up with my own version.  It's very similar but dare I say even better!  It's got a ton of fresh fruit, wine, BRANDY, triple sec, peach schnapps, and you're destined to fall in love with it. I guarantee it.  What's also great about it is that it makes enough for about 4-6 glasses so invite some other witches over for some of this brew! ;) Be sure to serve it in some of our "Cheers Witches" wine glasses and it's bound to be a fun and spookylicious time!  Here it is girls--- Cheers Witches and Happy Halloween!!

MOMMA MOJITO'S WITCHES BREW (AKA SANGRIA)

Ingredients:

  • 1 Bottle of Red Wine (I used a Cabernet. Use what you prefer, but I recommend a Merlot, Burgundy, or a Cabernet.)
  • 4 oz. Brandy -- this is the key ingredient!
  • 4 oz. Peach Schnapps
  • 3 oz. Triple Sec
  • 1.5 oz. Simple Syrup
  • Fresh Sliced Fruit: Strawberries--approximately 10, Peaches--2, Limes--2, Orange--1, Lemon--1
  • Ice
  • Sprite or Club Soda -- to top off each glass (optional)

Directions:

In a large pitcher, throw all your sliced fruit in the bottom.  Pour the simple syrup over the top of the fruit.  Now, add your wine, brandy, peach schnapps, and triple sec.  Refrigerate overnight preferably or at least 2 hours.  Take a wine glass and fill halfway with ice.  Pour the refrigerated brew along with plenty of fruit slices in each glass filled to about 2/3 to the top. Then, add Sprite or Club Soda to taste and give it a slight stir. That's it! Cheers Witches!!!

Hey mommas!! It's that time again!! Finally Friday!! I'm super excited this Friday because I have a date night planned with Mr. Mojito and we NEVER get date nights!! We do try to have regular lunch dates but those are usually short and sweet as we both always have work to get back to! But there's just something so nice and relaxing about having a date night every once in a while!! Who am I kidding?? I mean as OFTEN AS POSSIBLE!!! You mommas get it--we all could use as many date nights sans kids fighting, whining, and cleaning ketchup off faces as we can get...am I right??!!

Anyway, as much as I love a good cocktail on Fridays, cocktails are notoriously caloric and loaded with sugar-- and those can add up quickly on the waistline unfortunately.  I'm under the belief that all drinks should be calorie-free right....I mean I completely understand that a slice of cheesecake is going to cost me loads of calories and fat, but do I really have to admit that cocktails have lots of calories and sugar?? And what about my Pumpkin Spice Latte?? Can't I enjoy that guilt-free for goodness sake?! Ugh. Reality sucks sometimes.  Don't fret though mommas!!!! I have a delicious, quick, and delightful cocktail that is UNDER 120 CALORIES. Um YEAH you heard me right.  All the deliciousness of a fabulous cocktail without the guilt...yes please!! (pssss the secret is LaCroix---if you haven't tried LaCroix yet, we may not even be friends. LaCroix is seriously my secret to life.  Do yourself a favor and get you some STAT...in all flavors..they're all delish! But I will admit I'm partial to the Peach-Pear!)  So here it is mommas...my figure-friendly Skinny Sparkling Juice served up in my adorable Prickly Pear Cactus Sipper!! Cheers mommas to good guilt-free cocktails and to date nights without the kids!! ;)

MOMMA MOJITO'S SKINNY SPARKLING JUICE (UNDER 120 CALORIES)

Ingredients:

  • 1.5 oz. Tito's Vodka (you can substitute your favorite but may change the calorie count!)
  • 1.5 oz. Trop50 Orange Juice
  • Splash of Grenadine (approximately 1 teaspoon!)
  • Peach-Pear LaCroix Sparkling Water to taste
  • Orange Slice for Garnish (optional)

Directions:

In a glass of your choice, fill with ice.  Pour in the vodka, orange juice, and grenadine.  Stir thoroughly.  Add LaCroix to the top or to taste.  Stir lightly.  Garnish with an orange slice if desired.  Enjoy immediately! Cheers!
