It's Friday Cocktail Time! Long Island Iced Tea Edition!

Hey mommas!! Friday is finally here! Hope you all had a wonderful week! I'm so excited that it's finally starting to get consistently warmer around here in OKC.  This winter was a dud and I'm ready to say bye to it already.  Over it.  I like a little winter weather (i.e. SNOW) but ice? Ummm...no thanks.  I'll pass.  Can you tell I have spring fever?? :)

My youngest kiddo turned 7 yesterday, and I'm feeling a bit like an old lady.  How is it that my youngest kid is already 7??  I still feel like a 21 year old for goodness' sake!  So needless to say, I've been super busy this week in birthday prep mode for him.  You mommas know how it goes...wrapping presents, cake, party planning, party favors and everything in between.  When you first have kids, birthday parties sound like so much fun to plan.  And they are a little bit.  But they are sooo much work!  I'm exhausted and it's not even party time yet!!  Ugh.

Who needs a strong cocktail?! Okay, good.  Me too!  Enter the Long Island Iced Tea.  Yeah, she's a strong one alright.  This is the cocktail that they limit you to 3 max at many bars because it's loaded with plenty of booze.  It's strange because you'd think that having 5 different alcohols in a drink would taste awful, but somehow it's delicious.  Throw in some coca-cola and you have yourself a yummy and strong cocktail.  No, there's not actually any tea in it--you knew that right? ;)  It's okay, I didn't know years ago when I ordered my first one either.  Here I was thinking I was ordering some alcoholic version of sweet tea.  Umm not so much.  This drink is not for the faint of heart so proceed with caution.  But do proceed, because it really is delicious--trust me.   Here it is girls, my Long Island Iced Tea.  Enjoy and I'll see you next week!

MOMMA MOJITO'S LONG ISLAND ICED TEA (makes 2!)

Ingredients:

  • 1 oz. Gin
  • 1 oz. White Rum
  • 1 oz. Silver Tequila
  • 1 oz. Vodka
  • 1 oz. Triple Sec
  • .75 to 1 oz. Simple Syrup (depending on your sweet preference!)
  • Juice of Half a Lemon
  • Coca-Cola to Taste
  • 2 Lemon Wedges for Garnish

Directions:

In a cocktail shaker filled with ice, pour in all liquors, simple syrup, and lemon juice.  Shake until well chilled.  Strain into 2 highball glasses filled with ice.  Next, pour in coca-cola to the top of each glass.  Garnish with the lemon wedges.  Cheers!

It's Friday Cocktail Time! Cape Cod Edition!

Hey mommas! Happy Friday to ya! March is finally here!! I am so excited! March makes me think of the start of mojito season! YES!!!!! However, spring is a little late here in Oklahoma this year so I'm still waiting patiently for the arrival of my mint plants to come back to life from their winter sleep.  We did just have 4 days of ice and snow last week, so I guess I'll have to wait a little longer for spring to arrive.  But don't worry mommas-- it won't be too long until I give you the first mojito recipe of the year...hopefully in time for spring break! ;)

Speaking of spring, our spring arrivals have been pouring in and they are to-die-for.  You are going to love this new collection.  Set your alarm clocks because this gorgeous collection is dropping Monday, March 12th at 10am and you don't want to miss it! Think beautiful floral prints, bold stripes, and gorgeous muted colors in sage green, blush, and seafoam blue.  PLUS, we have some gorgeous accessories to go with them!  Eeek!! I'm so excited to show you mommas!

In other news, there's a new addition to my own family--an adorable Golden Retriever puppy named Stella!  She is seriously the cutest.  Is there anything more perfect for spring than a sweet little puppy? I have an inkling that she'll be showing up in some of our pics because I just can't resist!  Speaking of, guess who's sound asleep at my feet right now as I'm writing this?! Yep that would be Stella...aka Mojito Puppy.  Be on the lookout for her to be making her Momma Mojito debut soon!

This week's cocktail is a classic.  Simple, refreshing, and delightfully easy.  I'm sure you all know it too.  It's what you simply called in college a "Vodka Cranberry."  But that's not very exciting.  Cape Cod sounds much more interesting.  Regardless of the name, this drink is a breeze and you need to know how to make it.  Cheers mommas and have a great weekend!! :)

MOMMA MOJITO'S CAPE COD

Ingredients:

  • 2 oz. Tito's Vodka
  • 3-4 oz. Simply Cranberry Juice (you can use Ocean Spray if you prefer)
  • Juice of Half a Small Lime (not a key lime though!)
  • Lime Wedge for Garnish

Directions:

In an old-fashioned glass or glass of your choice filled with ice, pour in vodka and juices.  Stir together.  Garnish with the lime wedge.  Cheers!

It's Friday Cocktail Time! Cucumber Lime Gimlet Edition!

Hey mommas! Happy Friday to ya!! Can you believe the last Friday of February is already here?! It's almost March!! Crazy right? We have had a rough winter here in OKC and not the pretty kind of winter.  It has been a bone dry and bitterly cold winter.  I don't know about you girls but my feelings on the cold are this:  if it's going to be miserably cold, then I better get some snow out of it.  And this year has been zilch. Nada. Nothing.  No snow whatsoever.  Just nasty cold.  Ugh.  Bring on the spring please!!!

Speaking of spring, most of you all probably know by now, I'm a wannabe master gardener.  Like seriously, I love gardening and I love watching things grow just for the fun of it.  However, let's be real.  These days, I have zero free time and gardening is hard for me to make a priority for myself. But I vowed this year as one of my New Year's resolutions that I'm going to take time out to do some of the things I love so one of those is going to be more gardening!  Yay! One of my absolute favorite things to grow is cucumbers.  Is there anything more fresh and crisp from the garden besides a ripe green cucumber?! YUM.  So good!  Besides a salad, cucumbers are also delicious in drinks.  I love to make flavored water with fresh cucumbers, but I also love to make cocktails with cucumbers as well.  My favorite? Well that would be my Cucumber Lime Gimlet!  It tastes so light and refreshing.  You're going to love it too.  So here it is girls, my Cucumber Lime Gimlet! MOMMA MOJITO'S CUCUMBER LIME GIMLET

Ingredients:

  • 1.25 oz. Gin (I used Bombay Sapphire)
  • 4 oz. Tonic Water
  • 3/4 oz. Rose's Sweetened Lime Juice
  • 3-4 Cucumber Slices
  • 2 Lime Wedges
  • 1 Cucumber Slice + 1 Lime Slice for Garnish

Directions:

In a glass of your choice, place the cucumber slices and lime wedges in the bottom of the glass.  Fill with ice.  Pour in the gin, sweetened lime juice, and tonic water.  Give it a slight stir.  Garnish with a slice of cucumber and lime.  Cheers!

It's Friday Cocktail Time!! The Frozen Margarita Edition!!

Hey mommas! Happy Friday!! Hope you all had a fabulous week! It's sure been a busy week around my house! Mr. Mojito is hard at work this week building a rock patio in our backyard, and I am pretty darn excited about it! I can't wait to sit out there when the weather gets nice and relax in a lawn chair with an ice cold cocktail in hand.  Eek! I'm getting excited just thinking about it!

If you didn't already know it, next week on Thursday, February 22nd is National Margarita Day which is my 2nd favorite drink holiday behind National Mojito Day of course!! Over the year and a half I have been writing this cocktail blog, I've given you quite a few margarita recipes...BUT I haven't given you my frozen margarita recipe yet! Well, in honor of National Margarita Day, I now present to you my delicious, quick, and oh so easy Frozen Margarita!! Enjoy mommas and I will see you next week! ;)

MOMMA MOJITO'S FROZEN MARGARITA (a pitcher's worth)

Ingredients:

  • 1 6 oz. can of Minute Maid Frozen Limeade  (sometimes the 6oz. size is hard to find--you can make it with the 12oz. size and just double the rest of the ingredients and this will make 2 pitchers worth--otherwise just pour half of the 12oz. can out and save for another use.)
  • 6 oz. Agave Silver Tequila (just use the limeade can for measuring!
  • 3 oz. Triple Sec or your favorite Orange Liqueur
  • 1 tsp. of Agave Syrup (more if you like it super sweet or omit if you don't want any sweetness)
  • Fresh Lime Juice to Taste (I think the juice of one lime is enough but you be the judge)
  • Ice (about 4-5 cups is good)
  • Kosher Salt for the Rim
  • Lime Wedge or Slice for Garnish

Directions:

Pour out some of the kosher salt in a saucer or on a plate.  Run a sliced lime over the rim of your margarita glasses and then dip the glasses into the salt all along the rim until coated.  Set aside.  In a blender, pour in the limeade, tequila, triple sec, and agave syrup.  Next, add the ice.  Blend until smooth.  You may need to stop the blender a couple times for stirring.  Add enough ice until frozen and smooth, not watery.  Pour into the glasses and garnish with a slice of lime.  Enjoy!

Mr. Mojito really needed this margarita after a long day of working on my new patio!! :)

It's Friday Cocktail Time! Love Potion Edition!

There's a lot of people that think Valentine's Day is a waste of a holiday and just an excuse for Hallmark to make some extra cash. Ahem...(I'm looking at you Mr. Mojito!) Anyhow, I actually enjoy Valentine's Day.  In my opinion, it doesn't hurt anybody to take a day in our super busy lives to just remember to tell the people in our lives how much we love them and how much they mean to us.  I mean, a little extra love never hurt anybody right?! Plus, I love how excited my kiddos get to give out Valentine's.  It's so sweet.

So needless to say, I like making fun and yummy things for Valentine's Day.  Red Velvet Cheesecake Brownies? Yes please.  Chocolate-Covered Strawberries?? Don't even get me started.  Delicious and decadent Valentine's cocktails?? Umm, where do I sign up??

So this Valentine's Day, I made a sweet and yummy cocktail that I have affectionately named Love Potion! ;)  It's like a punch in that it has several liquors and juices, and it's dangerously easy to drink.  You're going to love it.  Plus, my recipe is made for 2 cocktails!! So it's perfect for splitting with your Valentine or if he's being particularly cranky about Valentine's Day being a fake holiday, then skip the sharing and save the second one for round 2 for yourself! ;)

MOMMA MOJITO'S LOVE POTION (makes 2)

Ingredients:

  • 2 oz. Cake-Flavored Vodka (if you can't find cake-flavored then substitute something like strawberry or vanilla vodka)
  • 2 oz. Pineapple-Flavored Rum
  • 1.5 oz. Triple Sec
  • 3 oz. Cranberry Juice
  • 2 oz. Pineapple Juice
  • 3-4 Small Splashes of Grenadine Syrup
  • Red Sanding Sugar or Valentine's Sprinkles (optional)
  • Strawberries cut into Heart Shapes (optional)
  • Valentine's Swizzle Sticks (optional)

Directions:

Wet the rim of 2 glasses lightly with water and dip into sugar/sprinkles to coat the rim.  Fill each glass with ice and set aside.  In a large cocktail shaker, fill with ice and pour all ingredients in.  Shake until chilled.  Strain into the glasses and garnish with a Strawberry Heart and a Swizzle Stick for stirring while sipping.

(*Note--strawberry hearts can be cut with a small inexpensive heart-shaped cookie cutter.  However, if you're like me and you couldn't find yours anywhere in your kitchen (seriously where the heck did that thing go?!) then feel free to cut it out free-handed with a knife like I did!*)

(*Also note--I found my Valentine's "LOVE" swizzle sticks at the dollar spot in Target!*)
