It's Friday Cocktail Time!! Encore of the MARDI GRAS EDITION!!

Hey mommas!! Did you know that Mardi Gras season is here already? For those of you like me that don't actually celebrate the religious side of Mardi Gras but join in on the festivities anyway, well newsflash--Fat Tuesday is coming up on February 13th! Yep, it's time to let the good times roll...or as they say down in Louisiana, "Laissez les bon temps rouler!!"

For those of you who missed my HUGE Mardi Gras post last year, well here's your chance to catch up.  It's an encore of our Mardi Gras edition, and oh my goodness is it a good one! Not only is there my recipe for the iconic Mardi Gras cocktail, the Hurricane, in here BUT I also included my recipe for my delicious homemade Gumbo!! Gumbo is a big deal around my house girls.  To tell you the truth, I think if Mr. Mojito found a woman who could make gumbo better than I do, he might actually leave me for her.  Haha, not really but he does take his gumbo seriously and I...well I take all food seriously so it's a win-win!  Enjoy these 2 recipes mommas and don't forget to watch the video of the gumbo cooking down at the bottom.  Cheers mommas and see you next week! ;)

Hey there mommas!! Guess what?! It's Mardi Gras time!!! I don't know about all of you but I sure do love Mardi Gras time.  In my daydreams, I imagine myself as a Louisiana woman barefeet with a sundress on and tanned skin, always listening to the Revivalists and Preservation Hall Jazz Band, windows open in the house, smile on my face, and cooking away in the kitchen some unbelievably delicious and spicy dish that I somehow make look easy like I've been doing it all my life.  BUT that's just my daydreams.  Reality isn't that picturesque.  However, that doesn't mean that I can't LOVE me some of that cajun culture! Good food, good music, good times...I mean what's not to love right??

Well in my time of admiring and aspiring to be as cool as a Louisiana native, I've learned a thing or two in the kitchen about cajun food.  I know most of the time I just post cocktail recipes on here, but today I'm going to do a little something different!!!!  In celebration of one of my favorite times of year--Mardi Gras, I'm bringing you my very own Gumbo recipe as well as my delicious Hurricane cocktail!!!!!

Now don't be fooled by people that will tell you Gumbo is easy to make.  They are liars and should not be deceiving us normal people who aren't goddesses in the kitchen.  Gumbo is a love/hate relationship for me.  I LOVE to eat it but dread cooking it.  I get anxious, sweaty, and hungry all at once.  It's a weird feeling but for some reason I keep doing it.  It's because if you get it right, Gumbo is SO DAMN GOOD.  It's comforting, spicy, delicious, and keeps you coming back for more.  Don't be afraid to practice this one a few times and even your screw-ups won't taste too bad.  But it does take practice and I will tell you why... It's the roux.  Damn roux.  It's so simple yet so incredibly complicated that it irritates me.  You have to cook the roux until it's chocolate brown. Yes past the part where you think you need to stop.  Nope keep cooking and stirring. Then at the very last second when you think surely you have burned the stuff, THEN that's when you stop.  It's taken me many a failed attempts at roux to sorta get this right.  I'm still no expert by any means but I'm getting better! ;)  Be sure to check out my video at the end of this post for a visual!!

On a different thirst-quenching note, the Hurricane cocktail is a fabulous cocktail that just goes hand-in-hand with Mardi Gras.  It's easy to make, easy to multiply it to make a pitcher for a crowd, and it tastes amazing.  Oh and did I mention that it's strong??? ;) Yes ma'am.  You didn't think it would be any other way right??  Feel free to modify the juices for whatever you have on hand. It's basically a boozy punch mixed with plenty of juices and plenty of rums.

MOMMA MOJITO'S GUMBO RECIPE

Ingredients:

  • 3/4 lb. uncooked chicken breasts, cut into bite sizes
  • 3/4 lb. Andouille smoked sausage, sliced
  • 1 lb. uncooked small, peeled, and tail-off shrimp
  • 1/2 cup vegetable oil + 1 tbsp. for cooking meats
  • 1/2 cup all-purpose flour
  • 1 cup finely chopped onion
  • 1 cup chopped celery
  • 4 garlic cloves
  • 1 chopped green bell pepper
  • 64 oz. reduced sodium chicken broth
  • 2 chopped Roma tomatoes
  • Creole seasoning (to taste) -- (I like Tony Chachere's or Slap Yo Mama!)
  • 12 oz. frozen cut okra
  • Chopped fresh flat-leaf parsley
  • Hot cooked white rice
  • Cornbread

Directions:

In a large pot or Dutch oven, heat the 1 tbsp. of vegetable oil over medium-high heat.  When hot, throw in the chicken pieces.  Lightly season with a bit of creole season as they cook.  Turn and finish cooking on the other side until no longer pink.  Remove the chicken and set aside.  Now, throw the sausage in and sprinkle with some creole seasoning as well.  Cook until lightly browned on both sides.  Now remove the sausage and set aside. 

Now, this is time to make the roux.  Add your 1/2 cup of vegetable oil.  You need it hot.  Watch until you begin to see small bubbles.  When it's hot, throw in the flour with your whisk in the other hand.  Immediately, begin whisking CONSTANTLY for approximately 5 minutes or until the roux turns chocolate brown.  Yes chocolate brown.  KEEP WHISKING!! Does it look almost like it's burnt?  It's not.  Just when you think you've almost burned it, add the onion, celery, garlic, and bell pepper.  Stir very often and cook for about 5 minutes until the veggies are crisp-tender.

Next, stir in all of that chicken broth and the chopped Roma tomatoes.  Now season to taste with the creole seasoning.  It's going to take quite a bit because there's a lot of gumbo in there.  Taste as you go but be sure not to add too much because then it will be too spicy and too salty.  Throw in your cooked chicken and sausage, as well as your uncooked shrimp.  When all of that comes to a boil and the shrimp are pink and beginning to float, add the frozen cut okra and bring it to a boil again.  Then, reduce the heat to a simmer.  Add your chopped parsley and simmer for 20 minutes or longer.   The longer you let it cook, the thicker it will get.  Serve over hot cooked white rice in individual bowls and of course with a big helping of cornbread and a hurricane cocktail!!  YUM!! Enjoy mommas!!

 

MOMMA MOJITO'S EASY HURRICANE

Ingredients:

  • 2 oz. Dark Rum (I used Pyrat)
  • 2 oz. Pineapple-Flavored Rum (I used Captain Morgan Pineapple)
  • 1.5 oz. Cranberry Juice
  • 1.5 oz. Orange Juice
  • Juice of Half a Lime
  • Splash of Grenadine Syrup
  • Splash of Simple Syrup
  • Garnishes such as orange wheel, lime wheel, cherry, etc.

Directions:

In a hurricane glass, fill with ice and set aside.  Next, fill a cocktail shaker with ice and add all ingredients except the garnishes.  Shake and strain into the hurricane glass.  Garnish as desired. Drink immediately and enjoy with your bowl of Gumbo!!  Cheers mommas!!

**note-- I also have an additional Hurricane recipe from August 2017 that includes a few hard-to-find ingredients but is more similar to the original hurricane recipe...feel free to use my easy version shown here or the original because BOTH are delicious and taste very similar!**

It's Friday Cocktail Time!! Cherry Cuba Libré Edition!

Hey mommas! How was your week? Are you as excited as I am that Friday is finally here?? And it's the last Friday of January too! It's hard to believe a whole month of 2018 has gone by! How are your resolutions coming?

I used to be one of those people that didn't make resolutions...just kept on trying to better myself as a whole every year.  This year, I feel like I have so many goals I'm trying to reach that I had to put some things in writing and hold myself accountable.  So far, so good.  One month down.  Haha.

There's this chain restaurant that I'm sure you've all heard of and been to called BJ's.  It's fun and lively.  It has an assorted menu of all sorts of things that are all decent enough, but the real reason to go is the cocktails and the beer of course.  While my husband loves all the different types of beer they brew in house, I like to explore their cocktail menu.

Years ago, my family and I were visiting College Station and went to the Texas A&M vs Alabama football game.  I can't remember now what month it was, but it was hot.  Ridiculously hot.  And since we waited until the last minute to get our tickets, we had nosebleed seats way up high at Kyle Field.  It was a long, hot climb up there and it was a long, hot trek down.  Then, by the time we navigated our way down through the crowd (after losing the game unfortunately), we had to make the long trek to the car.  All of this with 4 and 6 year olds I might add.  That's no easy feat!  We finally made it to the car and made our way through traffic to BJ's.  After an hour and a half wait, we were finally seated and I immediately told the waiter, "I NEED a cocktail." Haha.  I was desperate at this point after such a long exhausting day.  I ended up getting their Sailor Jerry's Cherry Soda which was essentially their cherry cola mixed with Spiced Sailor Jerry Rum.  It tasted like a glass of heaven.  I think I finished it in 3 gulps, it was so good.  To make a long story short, I quickly realized that while a good old fashioned Cuba Libré is wonderful, a cherry version??? Oh man, it is delicious.  So here it is mommas.  My oh-so-good and oh-so-easy Cherry Cuba Libré.  Cheers and see you next week! ;)

MOMMA MOJITO'S CHERRY CUBA LIBRE

Ingredients:

  • 2 oz. Spiced Rum (I like Bacardi Oakheart or Kraken for this one!)
  • 4-6 oz. Cherry Coca-Cola (Your choice on how much cola you like to add to your rum!)
  • 3 Dashes of Aromatic Bitters
  • Small Splash of Maraschino Cherry Juice
  • Juice of One Lime Wedge
  • Lime Wedge and a Maraschino Cherry for Garnish
  • Straw of Your Choice

Directions:

In a highball glass of your choice, fill with ice.  Pour in the rum, bitters, cherry juice, lime juice, and lastly the cola.  Stir it all together.  Garnish with a lime wedge and cherry.  Throw in a fun paper straw or whatever kind of straw you prefer for easy sipping and enjoy! :)

It's Friday Cocktail Time! The Stocked Bar Guide!

Hey Mommas! Happy Friday to ya! I hope all of you have had a wonderful week.  It was a super cold week to start around here, but it's finally warmed up a bit now.  I was getting a little desperate for some thawing out.  There's just something so miserable about getting out to take the kids to school and the gauge in my car reads that it's 6 degrees outside.  Yuck--no thank you.

January is always such a busy month for me.  There's lots of birthdays in my family in January.  Plus, January is a big planning and organizing month for me.  This month has been especially that way.  I'm determined to be more prepared and organized this year more than ever.  Speaking of being prepared and organized, January is also a great month to prepare and organize your home bar for the warmer months that will certainly be here before you know it.  Of course with those warmer months comes plenty of delicious, cold cocktails.

If you're a newbie to cocktail making and keeping a stocked bar at home, start out slow and easy.  There's no need to rush out and buy all of these items at once.  Add a few here and there and before you know it, you'll have everything you need.  The great thing is almost all of these items have a very long shelf life, so there's no worrying about them expiring (save for the items in the fresh ingredient list of course).  If you've been making cocktails for a while now, then all you'll need is a general restocking of your staples and add in some fresh new fun accessories and you'll be good to go!  I suggest adding some metallic paper straws, festive swizzle sticks from Dollar Tree, and some cocktail umbrellas! :)

Keeping a stocked bar is easy, and doesn't have to break the bank.  Adjust it to your tastes and your friends' and families' tastes that you have over to your house often.  If you hate tequila and can't think of a person that cares for it, then don't bother stocking it.  It's all up to you.  In my house, Mr. Mojito and I like rum quite a bit.  Therefore at any given point in time in my house, you will probably find 5-8 different bottles of rum!! Hey, I told you we like rum! ;)

MOMMA MOJITO'S STOCKED BAR GUIDE

Liquors/Liqueurs/Spirits:

  • Rum (I always, always, ALWAYS keep Bacardi Superior (Silver) on hand at all times; I also always keep a spiced rum on hand such as Bacardi Oakheart, Kraken, or Captain Morgan; then I also keep a dark rum on hand as well)
  • Vodka (my go-to is Tito's....I also like Grey Goose and Skyy)
  • Tequila (I recommend keeping a silver and a gold in your bar but it's up to your preferences...I like Patron, 1800, and Tres Generaciones)
  • Whiskey (I'm not a big whiskey drinker but I always keep it on hand for the occasional recipe and for guests...Crown Royal, Maker's Mark, TX Whiskey)
  • Gin
  • Brandy/Cognac
  • Orange Liqueur such as Triple Sec, Gran Gala, Grand Marnier
  • Vermouth

Additions:

  • Orange Bitters
  • Aromatic Bitters
  • Simple Syrup
  • Grenadine
  • Hot Sauce such as Tabasco
  • Worcestershire Sauce
  • Horse Radish
  • Sour Mix (homemade or store-bought)
  • Sugar
  • Sugar Cubes
  • Kosher Salt

Mixers:

  • Olive Juice
  • Pickle Juice
  • Tomato Juice
  • Lemon Juice
  • Lime Juice (sweetened and regular)
  • Orange Juice
  • Pineapple Juice
  • Other Assorted Juices such as Cranberry Cocktail JuicePomegranate Juice, or Ruby Red Grapefruit Juice
  • Club Soda
  • Tonic
  • Sparkling Water
  • Coca-Cola
  • Sprite
  • Ginger Ale
  • Ginger Beer (alcoholic or nonalcoholic -- whichever you prefer)

Fresh Ingredients/Garnishes:

  • Lemons

  • Herbs such as Mint (of course for making mojitos!), Thyme, Sage, and Rosemary -- availability will depend on the season
  • Olives
  • Maraschino Cherries (with Stems)

  • Spices from your Kitchen such as Nutmeg, Cinnamon, and Cayenne Pepper
  • Swizzle Sticks
  • Cocktail Straws
  • Cocktail Spears

  • Assorted Koozies

  • Blender
  • Handheld Juicer
  • Muddler

Now of course this list is just a starting point and you have to adjust it to your preferences.  There's lots of things you can add as you go like Blue Curacao, Bailey's, Cream of Coconut, and so many more yummy bar additions.  Nevertheless, it's a great compilation of all the essentials I keep on hand regularly in my bar in order to make any standard cocktail that I or a guest in my house might be craving.  Of course, I also recommend keeping a selection of beer and red and white wines available too.  Sometimes, you just want to keep it simple with a glass of wine on your porch swing.  I hear ya momma, me too.  Have a specific question about one of these items or need help trying to locate one of them?  Drop your question in the comments section, and I'll see if I can help! :) Happy Cocktail Making!

My home bar at the time of this post.  I like to rotate things out regularly.  You can find my light-up BAR sign at Target (it even has a timer!!). I keep the essential bottles out and handy.  In the drawers I keep bar tools, cocktail straws, koozies, and other accessories.  In the inside of the chest, I keep a selection of cocktail glasses and my other liquors and spirits that I don't use quite as often.  If you have young kids at home, then I suggest purchasing a larger cabinet and keeping everything inside with a lock on the outside.  Never hurts to be careful with little ones!

Fun Fact: That super old Budweiser can you see there? That was my Granddaddy's from a million years ago.  He turned it into a mug!  Now, it holds my collection of bottle caps.  I have yet to figure out what I'm going to do with all of the bottle caps I'm collecting.  Any clever ideas for me??

But that BAR sign though.... seriously run to Target and getcha one! It lights up for me every day by timer in the evening signaling that it's officially time for a cocktail! Now, that's my kind of decor! ;)

Hey mommas!! Happy Friday to ya!

Hope all you mommas are staying warm and healthy this winter!  Is it just me or is this one of the worst cold and flu seasons EVER?? Ugh!!! We've had our run of everything this season---strep throat, flu, cold, sinus infection, stomach bug...you name it and we've had it.  I can't wait for the sick season to be over.  If I'm not wiping my own nose, I'm wiping one kiddo's or both.  So I sure hope you mommas aren't having it as rough as we are with illnesses.

I can't wait for warmer weather when I can sit out in the sunshine in a sundress and flip-flops with a margarita in hand.  Ahhhh, that sounds so nice.  Extra lime please.  Yum.  In all of our illness-ridden house right now, that sounds pretty nice.  While I'll have to keep daydreaming about sitting out in the sunshine in my sundress and flip-flops, I don't have to daydream about that margarita!! That's because this week I made a delicious margarita that's perfect for the season.  It uses orange and cranberry flavors that are just right this time of year! Plus, it makes me feel like maybe summer isn't too far away after all and that's something to celebrate! Maybe add a little cocktail umbrella if you're feelin' the winter blues.  Cheers mommas and see you next week!

MOMMA MOJITO'S ORANGE CRANBERRY MARGARITA

Ingredients:

  • 1 1/2 oz. Silver Tequila
  • 1/2 oz. Triple Sec
  • 1 1/2 oz. Cranberry Cocktail Juice
  • 1/2 oz. Orange Juice
  • Juice of Half a Lime
  • Sugar (for Sugar Rim)
  • Fresh Cranberries (for Garnish)
  • Slice of Orange (for Garnish)

Directions:

In a glass of your choice, take the lime that you halved and rub in on the rim of the glass and then dip the glass in sugar to coat the rim.  Set aside.  In a cocktail shaker filled with ice, pour in tequila, triple sec, and all 3 juices.  Shake vigorously until thoroughly shaken and cold -- about 30 seconds.  Pour into the glass.  Garnish with a few fresh cranberries thrown on top and a slice of orange.  Cheers mommas!

It's Friday Cocktail Time!! Cinnamon Citrus Daiquiri Edition!

Hey mommas! Happy 1st Friday of 2018 to ya!!

Is it just me or did this first week of 2018 seem to be the longest week EVER?! Whew. I'm tired.  Not only did we have a nasty case of the stomach bug make its way through our family, but our old Labrador Retriever got really sick too.  We spent all night up with her on Wednesday night thinking it may have very well been her last night.  She was in an incredible amount of pain and wouldn't move more than a step or two before falling down.  We really thought we were going to lose her.  After a long vet visit and some new meds, she seems to miraculously be on the mend.  As my momma would say, "She's the dog with nine lives!" :) So hopefully we still have plenty of lives left with her.  She was my first baby before I had babies, so I'm pretty attached to her.  You fur-baby mommas will understand!

After all of that, the kiddos started school back up again which means bed on time, lunches, homework, school activities, and all of that jazz.  I'm a little worn out just thinking about it all really.  Thank goodness it's Friday! Who needs a cocktail?! Okay, good....me too!!

This week, I made a strong one.  But since it's rum, it's easy to drink and easy to love! ;) It's citrusy with juicy orange flavors, sweet with an interesting hit of Cinnamon-Infused Maple Syrup, and a little spicy thanks to the cinnamon.  It's the perfect cocktail for this cold winter weather, and the rum is bound to warm you up in no time! So kick your feet up momma and enjoy this decadent and delicious daiquiri! Cheers!

MOMMA MOJITO'S CINNAMON CITRUS DAIQUIRI

Ingredients:

  • 1 1/2 oz. Dark Rum (preferably good quality...or you can use Spiced Rum if you really like the Spice!)
  • 1 oz. Orange Juice
  • 1 tsp. Cinnamon-Infused Maple Syrup (if you can't find this then substitute regular maple syrup and add a dash of ground cinnamon)
  • Orange Slice (for garnish)
  • Cinnamon Stick (for garnish)

Directions:

In a cocktail shaker filled with ice, add rum, orange juice, and syrup.  Shake until thoroughly chilled...about 20 seconds or so.  Strain into a martini glass.  Garnish with a slice of orange and a cinnamon stick.  Enjoy immediately!
